The grapes used in the Soalheiro Granit are born in small dimension vineyards planted in a terroir of granite origin at 200 meters altitude. They are located in the unusual microclimate of the Monção and Melgaço regions at the most northern point of Portugal.
Vinification:
The grapes are harvested manually in boxes of small capacity and swiftly carried to the cellar. After pressing but before fermentation the must decantes during 48 hours using temperature control.
The fermentation takes place in stainless steel tanks in a temperature higher than usual for white wines. Bottling is made after a period of batonage and aging in fine less.
